Sylvain DELHAYE, a former sales executive in a food company, set up his brewery in Quérénaing in 2012.
In 2002, he decided to give up his career to embark on a new adventure: taking over the family farm and creating a store selling regional produce. He undertook the restoration of a farmhouse and, after extensive work, opened the "La Ferme des Traditions" store in 2004, selling products from the family farm in Sommaing-sur-Ecaillon (certified organic products) as well as artisanal products.
In 2007, he gave concrete expression to his attachment to the terroir and his agricultural origins by taking over part of the family farm. In 2012, the company continued to expand with the creation of a craft brewery and estaminet.
A lifelong beer enthusiast, he first worked on the yeast/milk combination (when he was younger, he used to make cheese in the cellar of the family farm), and is now exploring another combination: yeast/malt.
Today, this passionate brewer offers a wide range of unfiltered, bottle-fermented craft beers. Sylvain Delhaye, who is very attached to tradition and the land, gives beer all its nobility.
This craftsman brews his own beers from local ingredients, creating beers with surprising flavors: "Les Bières de l'Ecaillon", a reference to the river "Ecaillon" which flows through the village of Quérénaing.
On the production site, in the old sheepfold, you can discover the secrets behind the conception of the different beers, and of course taste them (in moderation, of course...).
A visit to the store will allow you to take away many of the region's emblematic products: potjevlesch, Flemish carbonade, flamingos with Maroilles, sausage with Speculoos, traditional Flemish waffles, coffee with chicory, and many other specialties.
The little extra: organic apples and strawberries, organic seasonal fruit and vegetables, endives? and cheeses from the Avesnois region.
